This grease comes from cooking, food preparation, equipment cleaning, and dishwashing. If it is discharged without proper control, it can cool, solidify, and accumulate inside pipes, causing blockages, overflows, and costly damage. Grease testing is therefore not a minor administrative task; it is a basic safeguard for any central kitchen.

    First, testing protects drainage systems. Regular oil and grease monitoring shows whether grease traps, separators, or other pretreatment equipment are working properly. It helps managers know when units need cleaning, repair, or upgrading—before grease escapes into the sewer.

    Second, testing supports regulatory compliance. Many municipal sewer authorities set limits on FOG discharge from commercial and institutional kitchens. Without testing, a central kitchen cannot demonstrate compliance or respond effectively to violations. This can lead to fines, surcharges, mandatory upgrades, or even discharge restrictions.

    In short, grease testing in central kitchen wastewater is necessary for compliance, cost control, infrastructure protection, and environmental responsibility. A central kitchen that measures FOG can prevent problems at the source instead of paying to fix them downstream.
