    pH is a core parameter in mineral water production. It directly influences taste, chemical stability, and regulatory compliance. During the production process—from groundwater extraction to final bottling—pH can fluctuate due to changes in source water composition, treatment efficiency, and ambient temperature. 

    Traditional laboratory testing, while accurate, provides only discrete snapshots and cannot support real‑time control in continuous production. The online pH analyzer fills this gap, delivering continuous, real‑time measurement that enables precise process management.

    Principle and Suitability

    Online pH analyzers operate on electrochemical principles, using a combination electrode with a glass membrane sensitive to hydrogen ions. When immersed in water, the electrode generates a potential proportional to the pH, which is converted to a reading by a transmitter. Modern analyzers include automatic temperature compensation, which is essential for mineral water because conductivity is low and temperature fluctuations are common. 

    Industrial‑grade instruments are designed with sanitary fittings and corrosion‑resistant materials, making them suitable for the clean, humid conditions of a mineral water plant. They typically offer a full 0–14 pH range with resolution down to 0.01 pH and accuracy within ±0.1 pH, fully meeting production requirements.

    Ensuring Product Quality and Compliance

    Although the national standard for natural mineral water does not mandate a specific pH limit for the finished product, most producers adopt internal pH targets to maintain consistency. Online pH analyzers are installed at key points: raw water intake, after filtration, after disinfection, and at the filling line. They monitor pH continuously and trigger an alarm whenever the value drifts outside the preset internal range. 

    This allows operators to correct the process before non‑compliant product reaches the market. The continuous data stream also generates daily and monthly reports, supporting the documentation required for food safety audits and regulatory inspections.

    Optimising Taste and Flavour Consistency

    pH has a direct effect on the taste of mineral water. Water with pH near the upper end of the neutral range tends to taste slightly sweet and smooth, while lower pH gives a sharper, more acidic sensation. To maintain a consistent brand identity, producers often aim to hold finished‑water pH within a narrow band—much tighter than regulatory limits. 

    Online monitoring provides the data needed to track pH changes from source to bottle, detecting seasonal shifts or process variations that would otherwise go unnoticed until laboratory results arrive days later. This continuous feedback ensures that every batch meets the same taste profile, preserving consumer confidence and brand reputation.
